Best Ever Mini Cheesecakes A mini cheesecake recipe using graham cracker crumbs, cream cheese, and cherry pie filling. Ingredients for the crust: 1 cup graham cracker crumbs 2 tbsp sugar 3 tbsp butter melted for the cheesecakes: 16 oz cream cheese softened to room temperature 1/2 cup sugar 2 eggs 1/2 tsp vanilla extract 21 oz cherry pie filling Instructions Place paper cupcake liners into muffin cups. In a small bowl, stir together crust ingredients. Evenly divide mixture among the 12 muffin cups, about 1 tablespoon in each. Using the bottom of a spice jar, press the crust mixture firmly into the bottom of each muffin cup. Set aside. In a large bowl, beat together softened cream cheese, sugar, eggs, and vanilla until smooth. Pour mixture evenly over crusts. Golden Grahams S'Mores Bars These Golden Grahams S'Mores Bars are gooey, chewy, a little crunchy, and the perfect way to enjoy s'mores indoors.  Ingredients 5 cups mini marshmallows 1 1/2 cups milk chocolate chips 5 tablespoons butter , or margarine 1/4 cup corn syrup* 7 cups Golden Grahams 1 cup mini marshmallows Instructions Butter/grease a 9x13 inch baking pan. Add 5 cups marshmallows, milk chocolate, butter, and corn syrup to a large sauce pan. Melt the mixture together over low heat while gently stirring with a rubber spatula. Once melted remove from the heat (place on a heat proof surface) and immediately stir in the cereal and remaining cup of marshmallows. It will be very sticky. Spoon the batter into the prepared pan and flatten down using the back of your spatula (lightly greasing the spatula can help). Cookies & Cream Cookies Cookies & Cream Cookies are made with pudding mix and Oreo cookies for a perfectly soft and chewy cookie that is sure to be a favorite!  Ingredients 1 cup butter softened 1/2 cup brown sugar 1/2 cup sugar 1 4.2 oz pkg Oreo Cookies & Cream pudding mix 2 eggs 1 tsp vanilla extract 2 1/4 cups flour 1 tsp baking soda 1 cup white chocolate chips optional* 15 Oreo cookies coarsely crushed (you want big chunks!) Instructions Using a hand mixer, cream the butter and sugars. Add the pudding mix and mix until well blended. Add the eggs and vanilla and mix well. Add the flour and baking soda and continue mixing. You won't be able to stop.  INGREDIENTS Cooking spray, for pan 6 graham crackers 1 box brownie mix, plus ingredients called for on box 1 c. chopped Hershey's bars 1 (10-oz.) bag marshmallows DIRECTIONS Preheat oven to 350° and line and spray a 9”-x-9” baking pan with cooking spray. Layer bottom of pan with graham crackers. Make brownie mix according box and then fold in chopped Hershey’s bars. Pour brownie batter over graham crackers. Bake until almost done, 35 minutes. Remove from oven and top with marshmallows and bake another 20 to 25 minutes or until brownies are cooked through and marshmallows are golden. A Festive Fruit Salad with Lemon & Ginger I love serving this summery fruit salad for potlucks or celebrations. A zingy lemon ginger dressing on top makes it extra bright and festive! Ingredients ½ honeydew, cut into about 15 stars ⅓ seedless watermelon, cut into about 15 stars 2 cups sliced strawberries 1 cup mini mozzarella balls 1 cup cherries 1 loose-packed cup mint and basil leaves ½ cup blueberries ½ cup raspberries Lemon-Ginger Dressing: 2 tablespoons extra-virgin olive oil 1 tablespoon fresh lemon juice 1 tablespoon white wine vinegar 1 teaspoon minced ginger ½ clove of garlic, minced ¼ teaspoon maple syrup ¼ teaspoon salt freshly ground black pepper Instructions In a small jar, shake together the olive oil, lemon juice, vinegar, ginger, garlic, maple syrup, salt and pepper. Ingredients Coconut Cream *(see notes below) 2 (13.5-ounce) cans full-fat coconut milk, refrigerated overnight 2½ tablespoons maple syrup 1 tablespoon pure vanilla extract 1 tablespoon lemon zest pinch of sea salt 1-2 tablespoons lemon juice, optional, depending on thickness of your cream Strawberry Tart: 2 tablespoons coconut oil, solid, plus more for greasing the pan 2 cups plus 2 tablespoons almond flour heaping ¼ teaspoon sea salt 1 tablespoon maple syrup 1 large egg 2 cups coconut whipped cream (recipe above) 4 cups strawberries, halved Instructions Make the coconut cream. Ingredients: • 2 heads frisee, chopped into bite-size pieces • 4 cups wild arugula • 1 cup candied walnuts • 2 large Honeycrisp apples, sliced into thin matchsticks • Spiced Cider Vinaigrette (recipe below) Preparation: -In a large bowl, add the frisee, arugula, walnuts and about half of the matchstick-sliced apples, and drizzle lightly with some of the Spiced Cider Vinaigrette; -Next, add equal portions of the salad to bowls or plates, and then top each salad with equal portions of the remaining matchstick-sliced apples and another generous drizzle of the vinaigrette; -Serve as is, or garnish with a few additional candied walnuts.
